It ripens in 13 to 16 months in tropical and subtropical temperatures between 26 and 30 degrees.<\/p><p>As the young plant needs little water, sugar cane is planted in the dry period. Mash fermentation<\/h3>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-5bf4aa8 elementor-widget elementor-widget-text-editor\" data-id=\"5bf4aa8\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Water is added to the molasses, skimmings and so-called dunder \u2013 which refers to the residue of previous distillations that is valuable for the aroma. Yeast is added and the mash begins to ferment.<\/p><p>This produces alcohol, heat and carbon dioxide, which evaporates in this process. The vapour passes through the swan neck to the cooling tank in which it condenses.<\/p><p>A high-percentage rum containing about 75% alcohol has been produced.
